Pan seared Venison Loin with berries

A wonderfully satisfying dish combing the delicate warmth from the spice in our Wild Fennel Co. Venison seasoning paired with a rich fruity raspberry jus.

YOU WILL NEED

Venison Loin
Wild Fennel Co. Venison seasoning
A handful of frozen raspberries
200ml beef jus (store bought from local butcher or deli if you do not have homemade to hand)
30g dark chocolate

TO MAKE

Heat a splash of oil in a large shallow pan.

Rub the Venison loin all over with 1/2 a sachet of Wild Fennel Co. Venison seasoning

Place the venison in the hot pan and sear all sides until a slight crust forms - around 8 to 10 minutes depending on size.

Remove from the pan and allow the venison to rest.

Return the Pan to the heat and add the beef jus. Bring to a gentle boil and whisk in dark chocolate until it is melted and the sauce is shiny. Add the raspberries and allow them to soften.

Slice the venison loin and season with a little sea salt. Top with the chocolate and raspberry jus.

Serve with creamy mash
