Spoil Dad this Father's Day with these classic, flavoursome beef burgers. Serves 4.
700g beef mince
1 onion diced
4 brioche burger buns
4 tomatoes - sliced thickly
Lettuce - washed and rinsed
8 slices of Swiss cheese
Mix the beef mince, egg, breadcrumb and diced onion (keep a heaped tablespoon of onion aside for assembling) and Wild Fennel Co. beef seasoning thoroughly in a bowl and separate into 8 large meatballs. Press into burger patty shapes and place in the fridge to chill for 5 minutes.
- Handy tip is to regularly run your hand under cold water when working with any type of mince. This will prevent it from sticking to your hands.
Heat a non-stick frying pan over medium-low heat with a little splash of olive oil and cook half the patties for about 4 minutes on each side or until browned and cooked through. Transfer the patties to a plate, set aside and keep warm. Repeat with the remanding 4 patties. Place all patties onto a large tray and top with sliced cheese. Place under a grill to melt the cheese. Remove from oven and leave to rest while you slice brioche buns in half, and toast lightly under the grill (the cut side of the bun facing upwards).
Once toasted, spoon over the chipotle mayo on the brioche base followed by 2 pattis. Then sprinkle some finely diced onion, layer on a couple of thick slices of tomato, lettuce and finally spread the brioche lid with a generous spread of Dog Town BBQ mustard.
