This dish is well worth the wait! Make more than you think you'll need... you'll regret it if you don't!
YOU WILL NEED
1kg good quality thick-cut streaky bacon
200ml of dark beer
200ml maple syrup
Wild Fennel Co. Pocket pepper
TO MAKE
Mix the dark beer and maple syrup together.
Lay the streaky bacon in a shallow dish and pour over the beer and maple mix. cover and leave to marinate overnight in the fridge.
Remove the bacon and pat dry. Strain the marinade and freeze it for next time. Place the bacon on a greased baking tray and sprinkle generously with the Wild Fennel Co. Pocket Pepper and cook under a hot grill until crisp.
Eat with avocado and poached egg on toast, in a classic bacon sandwich or as is straight from the grill!
Be sure to save any excess fat from cooking for Sunday potatoes... Enjoy!
