Try this delicious dish for breakfast this weekend, bursting with flavour and colour, the best way to start your day.
YOU WILL NEED
2 - 3 large orange kumara
2 sticks of chorizo
salt & pepper
Peel the kumara and roughly cube into 2cm chunks, slice the chorizo. Fry together over a medium heat in a large non stick pan. Once the kumara is cooked and has started to caramalise, make four small holes and crack an egg into each one. Once the eggs are done, sprinkle with the Wild Fennel Co. Pork seasoning, place some basil on top and serve.
Top with your favourite chilli sauce to give this dish an extra little kick or drizzle with smoked balsamic vinegar!
