2 x chicken breasts
Wild Fennel Co. chicken seasoning
1 bag mixed salad leaf
Handful of fresh soft herbs (basil, coriander, parsley)
1 cup blueberries
1 chopped mango
1/4 cup toasted sliced almonds
1 sliced red onion
Coat the chicken breasts with Wild Fennel Co. seasoning (the more the merrier!) and grill until cooked on the BBQ for those beautiful charred flavours. Alternatively, pan fry or grill for 7-8 minutes each side until cooked through. Wrap in foil and rest for 5 minutes.
Mix all the other ingredients apart from the lime in a salad bowl. Slice the chicken and place over the salad. Squeeze the fresh lime into any of the left over cooking juices from the chicken, and pour over the salad as a dressing. Toss and serve.
